Food and Beverage Services – (Pathway: Specialized Coffee Certificate)
Program Description:

The program aims to provide the trainees with the knowledge and skills that are needed in the Coffee industry. The program will cover the technical skills in Barista, Brewing, and Sensory fields in addition to soft skills that are needed for café / Restaurants/Hotels management such as customer service, communication skills, management skills and food safety.

Course Objectives:

  • Coffee knowledge such as origins, processing, roasting and storage.
  • Advanced Barista techniques including calibrating grinders, milk steaming techniques and late arts.
  • Sensory analysis and its role in coffee industry
  • Basic management skills in the coffee industry
  • Cleaning, Maintenance, Troubleshooting, & Water Quality.
  • Basics of hygiene and poor hygiene hazards
  • Soft skills: customer service, communication skills, café management, and food safety.

Learning Outcomes:

  • Upon completion of the Food and Beverage Services Diploma, students will be able to:
  • Learn about the specialty coffee.
  • Learning about espresso, chemicals, and physical changes
  • Developing the ability to evaluate and grade coffee.
  • Explain a range of topics enabling trainees to understand the broad range of tasks required to be successful in running a Cafe.
  • Understanding the basics of pricing and accounting.
  • Understanding the global language in the coffee industry.

Technical Skills:

  • Ability to calibrate the essential elements of brewing
  • Demonstrate how to brew/measure/chart TDS using the Brewing Control Chart
  • Developing the ability to evaluate and grade coffee.
  • Making espresso and its different flavors.
  • Ability to steam milk for cappuccino and latte.
  • Efficiently manage and rotate inventory.
  • Manage staff and delegate tasks efficiently.
  • Improve operational performance.

Competencies:

  • Build goodwill through face-to-face customer service.
  • Applying latte art.
  • Demonstrate the ability to clean and maintain equipment properly.
  • Improve active listening skills so that trainees clearly understand messages.
  • Improve trainee soft skills such as communication, creativity, teamwork, and work ethic.
